The Food Truck industry is one of the best-performing segments in the broader food service sector, expanding over the past five years into a largely concentrated industry.

Gerald and Genia Aker’s, owner of G & Gee’s Snack Shack, a hometown favorite food truck business out of Waco Texas found a lane in the industry and hasn’t looked back since!

Family owned and operated, G & Gee’s first made their mark in 2016 with their highly sought-after monster size signature homemade burgers and fry baskets cook to perfect crisp.

A regularly scheduled day for the Snack Shack consists of serving weekends on Friday from 5-9 pm and Saturday 11 am -7 pm.

Although, Covid-19 continues to be a damper on most business operations by limiting business endeavors and closing some indefinitely. For G & Gee’s the unfortunate season would turn into something more of a blessing in disguise. “The orders are steady coming in”, they’d say.

Setting up shop outside the comforts of their own home filling call-in orders has kept them quite busy. This season has shown just how supportive G & Gee’s patrons really are. Genia Aker’s shares filing an order for an individual commuting from Austin Tx just to pick up a single fish plate.

It’s undisputable, there’s something about G & Gee’s Snack Shack that has left lasting impressions on the palates of many. Genia recalls one of their longest serving lines being at a Trail Ride lasting from 7:00 pm to 1 am of nonstop cooking.

What many may not know about this local food truck business, is their original menu consisted of only nachos and burgers served on a small grill under a tent.

Going from tent to a fully decked food truck and a menu once offering just two signature items, nachos and burgers.  G & Gee’s fully scaled menu now consists of countless hit items, including health conscience delectable options. Customer’s love the burger baskets, porkchop baskets, fish baskets and the newly popular juicy flavorful Turkey wrapped burgers.

Where does Gerald get his enjoyment?

Smiling faces, would also be the driving force behind the more than generous portion sizes. You get a lot for your buck. Times are certainly tough these days, Gerald would share his love for making sure people would have a good meal to go back to later or tomorrow and still be pleased.

But if you ask the dynamic cooking duo what’s their house favorite, you’d be surprised to know they don’ t have one. Explaining further, after being in the business for so long, how you feel about the food is less important. The real enjoyment is seeing the smiles on the faces of others.

Food truly made to leave lasting impressions, despite Covid-19 times one things for sure, G & Gee’s Snack Shack isn’t going anywhere fast.
